One of the biggest foods trending right now has to be sweet potato toast, and it is just too darn good. If you have yet to try these vibrant orange toasted goodness – you don’t know what your missing!

The basis is simple, swap your regular slice of bread for sweet potato, and toast until lightly brown. Top with avocado, nut butters, eggs, fruit, or whatever your heart desires. If you’ve been on Instagram lately, I am sure you have seen the many beautiful pictures showcasing this delicious trend.

But whats the hype? Well, let me tell you that the slices of sweet potato offer less calories than regular bread, and are also naturally sweetened offering a delicious taste without adding extra sugar and calories through jam and jellys.

The vibrant orange color of sweet potatoes also showcases it’s high vitamin A content. Vitamin A is a fat soluble vitamin important for sight, our immune system, and reproduction.

Although there are many, many ways to eat this delicious trend, I’m showcasing you my three top favorites. And they are A-M-A-Z-I-N-G!

To begin, wash a sweet potato and lightly brush to remove any excess dirt or debris. Cut into 1/4 inch slices. Place in a toaster for about 3-4 rounds, or until soft and lightly brown. Remove from toaster and add the toppings below.

Top toasted sweet potato slices with 1 tbsp peanut butter, sliced figs, drizzled with balsamic reduction on top. Yum yum yum.

Avocado Lime & Cilantro Sweet Potato Toast

For all of you cilantro fans, I am sure you will LOVE this. In a small bowl, mash one unpeeled and cored avocado with 1 tsp of lime. Top toasted sweet potato slices with mashed avocado, topped with either shredded or minced cilantro.

Peanut Butter, Banana, and Honey Sweet Potato Toast

Do you love peanut butter and banana? Adding honey and cinnamon to that combo is absolutely drool worthy. Top toasted sweet potato slices with 1 tbsp peanut butter, slices of banana, drizzled with honey and topped with sprinkled cinnamon. Now there’s a taste of heaven!

  • 1 tbsp peanut butter, natural
  • 1-2 dried figs, thinly sliced
  • Balsamic reduction
  • Avocado Lime & Cilantro (per slice):
  • 1/4 avocado mashed
  • Dashes of fresh lime juice
  • 3-5 cilantro leaves
  • Peanut Butter, Banana, & Honey (per slice):
  • 1 tbsp peanut butter, natural
  • 1/2 banana, sliced
  • 1 tsp honey
  • Cinnamon sprinkled

Instructions

  1. Place sweet potato slices in toaster for 3-4 rounds, or until soft and lightly brown.
  2. Peanut Butter & Balsamic Fig (per slice):
  3. Top toasted sweet potato slice with 1 tbsp peanut butter, sliced figs, and drizzle with balsamic reduction.
  4. Avocado Lime & Cilantro (per slice):
