Skinny Pina Colada

It’s already 30°C here in the Okanagan, BC (AND it’s only April!!), and it had me craving a major summer-time drink. My absolute all-time favorite beach drink is a Pina Colada, and unfortunately they are usually jam packed with calories and fat.

I decided to play around with developing a skinnier version, and one that would also be a perfect snack on the go. This shake contains dairy.

Skinny Pina Colada

It’s fairly simple. All you need is coconut extract, 0% MF coconut greek yogurt, crushed pineapples, skim milk powder (optional- for added protein), skim milk, and ice.

Skinny Pina Colada

Combine all ingredients in a blender, pulse for about 30 seconds. If you do not pulse long enough you can have intact pineapple fibers. Pulse for longer then you think.

When you are all done. Pour in a glass and top with cut up fresh pineapple and shaved coconut (both optional). Now, if only this drink could transport us to the Caribbean too life would be perfect!!!

Ingredients

  • Ice
  • 0.5 cup skim milk
  • 0.5 cup 0% MF greek yogurt, coconut flavor
  • 1 tbsp skim milk powder (optional-for added protein)
  • 0.5 tsp coconut extract
  • 0.5 cup crushed pineapple

Instructions

  1. Combine all ingredients in a blender.
  2. Pulse for about 30-60 seconds. If not blended enough pineapple fibers can remain.
  3. Garnish with cut pineapple and shaved coconut (optional).
