Peach Mango ChutneyThe first time I ever tried chutney I was absolutely hooked. I remember the day like it was yesterday. It was an authentic mango chutney served with an absolutely amazing spicy Indian curry, and let me tell you – it was A-M-A-Z-I-N-G!

Since then I have tried countless different chutneys- from sweet fruit to tangy herb and smooth yogurt, yet nothing compares to that delicious initial mango chutney.

My inspiration for this Peach Mango Chutney came from a Mango Chutney recipe in one of my favorite cookbooks from Whitewater Cooks titled Pure, Simple and Real.

Peach Mango Chutney

By combining peaches and mangoes – the end result is not only delicious, but also jam packed with nutrition. They are both high in vitamin A and C, and are also a good source of potassium and fiber. Also, they have an amazing sweet taste and texture.

As an added bonus, have I told you how simple and easy this Peach Mango Chutney is to make? With only 5 minutes of prep and 20 minutes total, you will have an amazing and tasty sweet chutney in no time.

Firstly in a small sauce pan, combine the first seven ingredients up until and including the onion. Secondly bring ingredients to a boil, and reduce heat to a low simmer and cook for about 10 minutes.

If your opposed to using regular brown sugar – you could always substitute the brown sugar with Splenda Brown Sugar Blend for the same great taste. However, make sure you half the amount as it is much sweeter than regular brown sugar.

Then add the mango, peach, and water to the sauce pan, and stir for another 5-10 minutes, or until chutney mixture is thick.

Remove sauce pan from heat and stir in the lime juice. Serve immediately on the side of one of your favorite curries, samosas, sandwiches, or however your heart desires.

Don’t be afraid to be creative with how it’s used. You could even try pureeing it and adding it to different sauces, dressings, or salads.

For storage, place in an airtight container in the fridge for up to 6 days. Peach Mango Chutney

Peach Mango Chutney

Ingredients

  • 1/4 cup brown sugar (or 1/8 cup Splenda Brown Sugar Blend)
  • 1/4 cup white vinegar
  • 1/2 cup raisins
  • 4 whole cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 3/4 cup onion, finely chopped
  • 1 1/4 cup mango coarsely chopped, fresh or frozen
  • 1 1/4 cup peach coarsely chopped, fresh or frozen
  • 2 tbsp water
  • 2 tbsp lime juice

Instructions

  1. In a small sauce pan, combine the first seven ingredients up until and including the onion. Bring to a boil, then reduce heat to a low simmer and cook for about 10 minutes stirring occasionally.
  2. Then add the mango, peach, and water to sauce pan; stir for another 5-10 minutes, or until thick.
  3. Remove from heat and add the lime juice. Serve immediately or store in an airtight container in the fridge for up to 6 days.
