Ginger Beef Stir Fry

To make this delicious and easy Ginger Beef Stir Fry, firstly combine all marinade ingredients in a large bowl. Secondly add the thinly sliced beef to bowl and mix well. Place in the fridge to marinate for at least 30 minutes and up until 4 hours.

After at least 30 minutes, remove beef from the fridge discarding excess marinade and pat beef dry.

Then heat a large wok to medium heat and add 1 tbsp of oil and half of beef. Saute until just brown on the outside, about 1 minute and remove from heat. Place the cooked beef in a large bowl. Add remaining 1 tbsp oil to wok and repeat with remaining beef. Remove from heat and again add beef to large bowl, keep warm.

In a small bowl, add the water, soy sauce and cornstarch and stir to create a slurry. Set aside.

Add remaining 0.5 tbsp to wok, add carrot and stir fry for 3 minutes. Add bok choy, garlic, ginger, and red pepper flakes. Stir fry for 1 minute.

Remove from heat and add the green onions and cornstarch slurry. Stir together until combined, and top with sesame seeds.

Divide Ginger Beef Stir Fry evenly among four plates, serve alongside cooked brown rice and enjoy!

Ginger Beef Stir Fry

Ingredients

    For the marinade:
  • 2 tbsp rice vinegar
  • 5 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp ginger, peeled and grated
  • 1 tsp red pepper flakes
  • 1 tsp cumin, ground
  • For the stir fry:
  • 1- 1 1/4 beef sirloin steak, thinly sliced
  • 2.5 tbsp canola oil, divided
  • 1.5 cup carrot, thinly sliced
  • 1 bunch bok choy, cut into bite sized pieces
  • 2 garlic cloves, thinly sliced
  • 1 inch nob of ginger, julienne cut
  • 1/2 tsp red pepper flakes
  • 1 tbsp corn starch
  • 2 tbsp water
  • 1 tbsp soy sauce
  • 4 green onions, diagonally sliced 1/2 inch long
  • 1 tbsp sesame seeds
