Corn, Potato & Turkey Bacon Chowder

When it’s chilly outside, I love to spend some of my time indoors cooking my favorite comfort foods. I’ve always thought there is something cozy about a hot soup on a cool day. It is the perfect thing to warm you up after spending some time in the great outdoors with loved ones.

If you like chowders, this Corn, Potato, & Turkey Bacon Chowder is the perfect addition to your healthy eating plan. It is light in calories and fat compared to regular chowders, however it remains heavy in taste.

Using salt reduced turkey bacon cuts back on calories, fat, and sodium content compared to regular bacon. I also use skim milk with the addition of flour to give it a thicker consistency comparable to cream, with less than half of the calories and fat.

This chowder takes a bit more time in the kitchen, but it is worth the wait if your not in a hurry.

To make the chowder, spray a large pan with cooking spray and heat to medium. Add the bacon and cook until crisp, making sure to flip both sides. This should take about 5-10 minutes. When the bacon is crisp, remove from pan and break into small pieces with your hands.

Remove the corn from the husk and lightly spray with cooking spray. Heat either a grill or BBQ to medium heat. If using a grill, place corn on grill and cook for about 15 minutes until lightly charred making sure to turn occasionally.

If using a BBQ, wrap corn with aluminum foil and cook for about 15 minutes or until lightly charred, making sure to turn occasionally. When complete, remove from heat and slightly cool, then cut off all kernels from cobs. Take 1.5 cup of kernel mixture and add to food processor, pulse until smooth.

In a large pot, add the potatoes and cover with water. Heat on high heat until water is boiling, and cook for about 2 minutes. Remove from heat and drain the water. Re-spray the large pot with cooking spray and add back the potatoes. Cook over medium heat for about 10-15 minutes, or until lightly charred. Then remove from large pot and set aside.

Re-spray the large pot with cooking spray and heat to medium. Add the onion and cook for about 2-3 minutes, stirring continuously. Add red pepper flakes and continue to stir for about 30 seconds. Add back the potatoes, skim milk, flour, thyme, chives and all of the corn. Stir well until a light boil is reached, then reduce heat to a simmer for 20 minutes while continuing to occasionally stir.

Remove from heat and add in the turkey bacon. Mix well, prior to serving add salt and pepper to taste.

Ingredients

  • 175g turkey bacon, reduced salt
  • 1 lb small red or white potatoes, cut into bite size peices
  • 4 ears corn on the cob
  • 3/4 cup onion, finely chopped
  • 1 tsp red pepper flakes
  • 4.5 cup skim milk
  • 1.5 tbsp flour
  • 1.5 tsp thyme, dried
  • 2 tbsp chives, dried
  • salt and pepper to taste
