Butternut Squash Mac 'n Cheese

I don’t know about you, but it’s fair to say that Kraft Dinner Mac ‘n Cheese played a huge part in my childhood. I remember BEGGING my parents to make it for supper, which was usually unsuccessful.

Much to my delight, whenever my mother was away from home my requests were usually answered by my father. And boy was it good!

Now-a-days Kraft Dinner doesn’t have as much of a place in our diet. Don’t get me wrong, the great cheesy and creamy taste is still there. However it’s definitely not as nutritious and delicious as home-made versions. Especially when there is added vitamin A rich butternut squash.

This Butternut Squash Mac ‘n Cheese is a creative way to enhance your overall nutrition while still consuming a well known comfort food favoite. The addition of butternut squash definitely adds to the creamy taste, and the addition of cayenne pepper and caramelized onions give it a rich smoky kick.

This dish is sure to please everyone in your home. In fact, do you have any picky eaters? You can barely tell the sauce is made from anything other than cheese. This is the perfect way to hide fiber, and add some important vitamins and minerals, such as vitamin A, vitamin C and potassium.

Butternut Squash Mac 'n Cheese

To make the delicious and healthy Butternut Squash Mac ‘n Cheese, firstly preheat an oven to 425 °F.

Then line a baking sheet with foil, and spray with olive oil spray. Place butternut squash on top and spray squash evenly with cooking spray. Place in the oven for 30-40 minutes or until tender, making sure to stir/flip every 10 minutes.

Meanwhile in a small sauce pan, add 1 tsp of canola oil and onion. Saute over low heat until golden, this should take about 15-20 minutes,Butternut Squash Mac 'n Cheese

Cook pasta according to package directions. Then drain and keep warm.

In a food processor or blender, combine the roasted butternut squash, sauteed onions, cayenne pepper, and milk. Blend until smooth.

Spray a 2.5 qt baking dish with cooking spray. Add cheese, butternut squash sauce, and pasta to baking dish. Mix well until combined, and add more milk for more of a creamy texture (or per preference).

In a small bowl, combine Panko and parsley, spread evenly on top of macaroni.  Place baking dish in oven for 5 minutes, then turn to broil for 1-2 minutes or until top is golden brown.

Remove from oven, let slightly cool and enjoy!

  • 5 cup butternut squash, chopped

  • 375g box of whole wheat macaroni (or pasta of choice)
  • 1 cup milk, low fat
  • 0.5 tsp cayenne pepper
  • 1 cup cheddar cheese, reduced fat
  • 1 tbsp parsley, finely chopped
  • 3 tbsp whole wheat Panko
